brew the coffee and set off to the side
finely dice the onion, green bell pepper, and celery
remove seeds from the serrano pepper and finely dice.
mince the garlic
add the brisket fat (or lard) to a hot pot and toss in all of the veggies
sauté all ingredients together until soft. add the beef, pork, and lamb and stir together. add the remaining spices and sauces, coffee and q rub. stir again.
simmer for roughly 30 minutes, stirring regularly to prevent sticking while breaking up the meats.
